Easy Peasy Great Weekend Started – Apple Pancakes

So, weekend is here and we are excited! Weekend is a lot more fabulous and fun when you’ve got the right treat for your family. And when that treat starts with a pancake packed with apple and some delicious maple syrup (optional), then your sweet weekend guaranteed — even the sleepiest person in the house will wake up to eat!

The first time I made these delicious goodness, my children kept asking for more. They are not just fluffy, they are packed with nutritious value. Apples are extremely rich in important antioxidants, flavonoids, and dietary fibre. And according to findings, the phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease.

 


When my first son was about a year old, he didn’t like eating raw fruits, so instead of forcing him, I decided to incorporate the fruits into his food. That’s how I came to learn about these delicious treats. Thus, if you have one like that in the family, trying a pancake with loads of apples wouldn’t be a bad idea. The good part is that it is so EASY to make and EASY on your wallet. Now what are you waiting for, let’s get our hands dirty…

Apple Pancake
Recipe
          Apple (2 or more, depending on serving + 1 to be cubed/diced)
          Flour – 100g
          Milk – 1 cup
          Sugar – 80g
          Baking Powder – 1 tsp.
          Egg (1 or 2 depending on serving)
          Butter – 100g
Preparation Method
Peel and grate 2 apples and set aside. In a bowl, mix sugar and butter together until fluffy (maybe not as fluffy as that of a cake mixture). Once fluffy enough, add egg yolk, mix well. Then add flour and milk simultaneously, continue to mix (but not in the same speed as that of sugar and butter. The speed should reduce).   Once thick enough (runny thick), add the grated apple with the water. Mix well and finally add egg white. Mix this into fold till well mixed. Once done, put a pan on the stove – medium heat, then add your mixture little by little to form a circle. Leave to cook for about 5 minutes (or till it’s golden brown) then turn to the other side. Leave to turn brown as well and flip to the other side again for 2 minutes for it to be well cooked. Once it’s done, remove from pan. Then peel skin and dice the last 1 apple, (you can add a dash of lime to the diced apple so it won’t turn brown), place the diced apple on your pancakes (that’s already arranged on a plate), add maple syrup if you have one and…your Apple pancake is ready. You can take it with coleslaw, salad or just with tea as breakfast.
